Tot-Cho Bar
- 1 (32-ounce) bag tater tots
- 1 cup chopped fresh cilantro, plus leaves for garnish
- 1/4 cup sliced scallions
- 1 (8-ounce) container sour cream
- 1 pound ground beef chuck
- 1 red onion, chopped
- 1 (16-ounce) jar salsa
- 2 cups shredded Mexican cheese blend
- 1 (16-ounce) container guacamole
- Cook the tater tots according to the package's directions.
- Transfer to a large platter.
- Meanwhile, stir the cilantro and scallions into the sour cream in a serving bowl.
- Heat the Timeless 12-inch cast iron pan over high heat until hot.
- Add the beef and spread in an even layer.
- Cook, stirring and breaking the meat into bits, until browned, about 7 minutes.
- Lower the heat to medium-high.
- Add the onion and cook, stirring occasionally, until crisp-tender, about 5 minutes.
- Add 1 cup salsa and cook, stirring, until the liquid evaporates, about 5 minutes.
- Remove from the heat and sprinkle the cheese on top.
- Line up the tater tot platter, cast iron pan with the beef mixture, sour cream mixture, remaining salsa, and guacamole on the dinner table, buffet style.
