Beef Fajitas With Chunky Guacamole
- 1 1/2 lb. lean, boneless round steak
- 2 Tbsp. lime juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 4 cloves garlic, minced
- 1/2 c. chopped fresh cilantro
- 1/2 c. chopped tomato
- 1/4 c. chopped onion
- 12 flour tortillas
- vegetable cooking spray
- 1 1/2 c. shredded iceberg lettuce
- 1/4 c. nonfat sour cream
- Partially freeze steak. Trim fat from steak. Slice steak diagonally across grain into 1/4-inch strips.
- Combine steak and next 4 ingredients in a shallow dish. Cover and marinate steak in refrigerator 6 to 8 hours, stirring occasionally. Combine cilantro, tomato and onion in a small bowl. Stir well. Cover mixture and chill at least 1 hour.
- Wrap tortillas in aluminum foil. Bake at 325u0b0 for 15 minutes. Coat a large nonstick skillet with cooking spray.
- Place over medium-high heat until hot. Add steak. Cook 5 to 6 minutes until steak is browned, stirring frequently.
- Remove steak from skillet using a slotted spoon and divide evenly among tortillas. Roll up tortillas.
