Beef Fajitas With Chunky Guacamole

  1. Partially freeze steak. Trim fat from steak. Slice steak diagonally across grain into 1/4-inch strips.
  2. Combine steak and next 4 ingredients in a shallow dish. Cover and marinate steak in refrigerator 6 to 8 hours, stirring occasionally. Combine cilantro, tomato and onion in a small bowl. Stir well. Cover mixture and chill at least 1 hour.
  3. Wrap tortillas in aluminum foil. Bake at 325u0b0 for 15 minutes. Coat a large nonstick skillet with cooking spray.
  4. Place over medium-high heat until hot. Add steak. Cook 5 to 6 minutes until steak is browned, stirring frequently.
  5. Remove steak from skillet using a slotted spoon and divide evenly among tortillas. Roll up tortillas.
