Healthified Carrot and Zucchini Bars

  1. Preheat oven to 350F In a large bowl, combine flour, baking powder, ginger, baking soda and salt.
  2. In another large bowl, stir together egg product, carrot, zucchini, brown sugar, raisins, walnuts, oil, applesauce, honey and vanilla.
  3. Add carrot mixture to flour mixture, stirring just until combined.
  4. Spread batter into an ungreased 13x9x2-inch baking pan.
  5. Bake about 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool completely in pan on a wire rack.
  7. For frosting: In a medium mixing bowl, beat cream cheese and powdered sugar with an electric mixer on medium speed until fluffy.
  8. Frost bars with frosting.
  9. Cut into bars.
