Black Eyed Peas `N Potatoes Recipe
- 2 tbsp. veg. oil
- 1/2 teaspoon mustard seed
- 1/2 teaspoon cumin seed
- 1/2 c. minced onion
- 2 cloves garlic, chopped
- 1 (15 1/2 ounce.) can black-eyed peas
- 1 lg. potato, peeled & minced
- 1/2 teaspoon grnd ginger
- 1/2 teaspoon grnd turmeric, optional
- Dash grnd red pepper
- In skillet heat oil.
- Add in mustard seed.
- Cover and cook till seeds begin to pop.
- Remove from heat.
- Stir in cumin.
- Add in onion and garlic.
- Cook and stir till onion is tender, not brown.
- Stir undrained black-eyed peas, potatoes, ginger, turmeric and red pepper.
- Bring to boiling.
- Reduce heat.
- Cover; simmer 15 min.
- Serves 4-5.
- Goes well with pork, lamb, or possibly chicken.
