Key Lime Pie
- 1 (13 oz.) can condensed milk
- 6 Tbsp. sugar
- 1/2 c. Key lime juice (pure stuff)
- 1 (9-inch) graham cracker pie crust or regular baked crust
- 3 egg yolks and whites, separated
- 1 tsp. grated rind
- pinch of salt
- Beat yolks separately and add to milk, making sure to mix well. Add juice, rind and salt.
- Mix well and set aside.
- Beat egg whites until peaks form, but not to the point that they become dry.
- Gradually add sugar and beat until very stiff.
- Fold egg and milk mixture into egg whites.
- Turn into graham cracker crust or regular baked crust.
- Bake in preheated oven at 375u0b0 for 12 to 15 minutes.
- Top with whipped cream when cool.
- Pie will be pale yellow, thick and creamy.
- Also good with lemon juice and rind if Key limes are not available.
