Key Lime Pie

  1. Beat yolks separately and add to milk, making sure to mix well. Add juice, rind and salt.
  2. Mix well and set aside.
  3. Beat egg whites until peaks form, but not to the point that they become dry.
  4. Gradually add sugar and beat until very stiff.
  5. Fold egg and milk mixture into egg whites.
  6. Turn into graham cracker crust or regular baked crust.
  7. Bake in preheated oven at 375u0b0 for 12 to 15 minutes.
  8. Top with whipped cream when cool.
  9. Pie will be pale yellow, thick and creamy.
  10. Also good with lemon juice and rind if Key limes are not available.
