Homemade Chicken Rice Soup

  1. Place chicken, 4 cups (1 qt.)
  2. water and pepper in large Dutch oven.
  3. Bring to boil; cover.
  4. Simmer on low heat 1 hour.
  5. Remove chicken from pot.
  6. Discard skin and bones.
  7. Cut chicken into bite-size pieces; return to pot.
  8. Add remaining water, onions, celery and bouillon.
  9. Bring to boil.
  10. Simmer on low heat 10 min., stirring occasionally.
  11. Add carrots and potatoes; simmer 20 min.
  12. ; stirring occasionally.
  13. Add broccoli and rice; simmer 10 min.
  14. Add VELVEETA; cook 5 min.
  15. or until VELVEETA is melted.
