Homemade Chicken Rice Soup
- 1-1/2 lb. bone-in chicken breasts
- 5 cups water, divided
- 1/4 tsp. pepper
- 1 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup chopped celery
- 2 chicken bouillon cubes
- 1 cup chopped carrots
- 1 cup chopped potatoes Safeway 2 pkg For $5.00 thru 02/09
- 1-1/2 cups small broccoli florets
- 1 cup instant white rice, uncooked
- 1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
- Place chicken, 4 cups (1 qt.)
- water and pepper in large Dutch oven.
- Bring to boil; cover.
- Simmer on low heat 1 hour.
- Remove chicken from pot.
- Discard skin and bones.
- Cut chicken into bite-size pieces; return to pot.
- Add remaining water, onions, celery and bouillon.
- Bring to boil.
- Simmer on low heat 10 min., stirring occasionally.
- Add carrots and potatoes; simmer 20 min.
- ; stirring occasionally.
- Add broccoli and rice; simmer 10 min.
- Add VELVEETA; cook 5 min.
- or until VELVEETA is melted.
