Ann'S Clam Chowder
- 3 medium potatoes, peeled and diced
- 3 carrots, peeled and diced
- salt
- 6 slices bacon
- 1 medium onion
- 2 pieces celery
- 1/2 green pepper
- 1 (28 oz.) can chopped tomatoes
- 2 tins (5 oz.) clams
- 1 bay leaf
- 1/4 to 1/2 tsp. thyme
- 1/2 tsp. oregano
- 1/2 Tbsp. chopped dried parsley or 1 Tbsp. chopped fresh
- big dash of garlic salt
- coarse ground pepper
- Cover potatoes and carrots with water.
- Add salt and cook until tender.
- Dice and simmer bacon, onion, celery and green pepper until all are soft.
- In soup pot, place remaining ingredients.
- Add potatoes and carrots and their water to the pot.
- Add the bacon mixture to the pot.
- Simmer for a few minutes to mix flavors.
