Shrimp Fried Rice Recipe
- 1/2 pound bacon
- 2 lg. minced onions
- 2 lg. minced bell peppers
- 2 c. converted rice
- 2 1/2 c. warm water
- 1/2 teaspoon soy sauce
- 1 pound sm. shrimp
- Season salt to taste
- Red pepper to taste
- Cut bacon into small strips, fry till crisp.
- Add in vegetables, saute/fry till tender.
- Add in rice and stir.
- Add in warm water, soy sauce, shrimp and seasonings.
- Bring to boil and boil 1 minute, stir once, cover tightly, reduce heat and simmer 20 min.
- Remove from heat and let stand till all liquid is absorbed (approximately 5 min).
- For softer rice use more water and simmer longer.
- For firmer rice, useless water and simmer for a shorter time.
