California Chicken Platter

  1. In a large skillet, cook bacon until crispy.
  2. Drain on paper towels, crumble and set aside.
  3. Meanwhile toss avocado with 2 tablespoons lemon juice.
  4. In a medium bowl, toss chicken with celery, crumbled bacon, blue cheese dressing, chives and remaining lemon juice.
  5. Mound salad on lunch plates lined with lettuce.
  6. Arrange tomato and avocado in a sunburst around chicken salad.
  7. Garnish with olives.
