Seasoned Chicken With Beans and Rice
- cooking spray
- 12 cup green onion, chopped
- 1 teaspoon garlic, minced
- 1 12 cups chicken broth
- 2 tablespoons all-purpose flour
- 3 cups frozen mixed vegetables
- 15 ounces kidney beans, rinsed and drained
- 1 cup chicken, shredded
- 1 teaspoon rosemary
- 12 teaspoon thyme
- 18 teaspoon ground red pepper
- 2 cups brown rice, cooked
- Spray large skillet with cooking spray.
- Saute green onions and garlic for 1 minute.
- Whisk broth and flour together in medium bowl, add mixture to skillet.
- Add frozen vegetables, beans, chicken, rosemary, thyme and red pepper.
- Bring to a boil, reduce heat and simmer, covered for 6 minutes or until veggies are tender.
- Serve over cooked brown rice.
