Welsh Plum Pudding
- 4 c. bread crumbs
- 4 1/2 c. flour, sifted
- 6 c. chopped suet (1 1/2 lb.)
- 2 c. chopped citron, lemon and orange peel
- 1/2 lb. candied cherries
- 1 lb. dates, chopped
- 2 chopped apples
- 1 c. chopped nuts
- 1 tsp. salt
- 1 tsp. mace
- 1 tsp. allspice
- 1 Tbsp. cinnamon
- 1 Tbsp. ginger
- 1 tsp. baking powder
- 3 pkg. raisins
- 1 pkg. currants
- 2 c. brown sugar
- 1/2 c. dark syrup
- 6 eggs, beaten
- 4 1/2 c. wine
- 1 tsp. nutmeg
- Combine all ingredients and fill greased pudding molds or baking powder cans, leaving room for swelling.
- Cans are covered, then boiled for 6 hours.
- Serve with a sauce flavored with brandy or whiskey.
