Vegetarian Orange Bulgur
- 1/4 cup bulgur wheat
- 2 tsp. extra virgin olive oil
- 1/8 tsp. salt
- 1/4 cup orange juice
- 2 Tbsp. fresh parsley, chopped
- 1/4 cup canned mandarin oranges (in juice)
- 1/4 cup black beans cooked or canned without added salt
- 1 chewy fruit-filled cookies
- 8 fl oz fat-free milk
- Bring 1/3 cup water to boil; add bulgur, oil, and salt; cover and simmer over very low heat 5 min.
- Turn off heat and stir in orange juice and parsley; cover and steam for 15 min.
- Stir oranges and beans into bulgur.
- Enjoy a fig bar cookie for dessert.
- Serve meal with a glass of milk.
