Dual Potato Gratin
- garlic mashed potatoes
- 3 Tbsp. butter or margarine
- 3 large baking potatoes, peeled and cut into 1/8-inch slices
- butter flavored cooking spray
- 2 Tbsp. grated Parmesan cheese
- fresh chives (garnish)
- Spoon garlic mashed potatoes evenly into 4 lightly greased, 4-inch gratin dishes, reserving 3/4 cup mashed potatoes.
- Set aside.
- Melt butter in a large saucepan.
- Add half of potatoes in a single layer and cook 2 minutes on each side or until tender. Drain on paper towels.
- Repeat procedure with remaining potatoes. Layer potato slices around outside edges of mashed potatoes, forming circles.
- Roll reserved mashed potatoes into balls, placing in center.
- Coat gratins with cooking spray and sprinkle evenly with Parmesan cheese.
- Bake at 400u0b0 for 10 minutes or until lightly browned.
- Garnish with chives.
- (Three cups regular mashed potatoes can be substituted.)
