Dual Potato Gratin

  1. Spoon garlic mashed potatoes evenly into 4 lightly greased, 4-inch gratin dishes, reserving 3/4 cup mashed potatoes.
  2. Set aside.
  3. Melt butter in a large saucepan.
  4. Add half of potatoes in a single layer and cook 2 minutes on each side or until tender. Drain on paper towels.
  5. Repeat procedure with remaining potatoes. Layer potato slices around outside edges of mashed potatoes, forming circles.
  6. Roll reserved mashed potatoes into balls, placing in center.
  7. Coat gratins with cooking spray and sprinkle evenly with Parmesan cheese.
  8. Bake at 400u0b0 for 10 minutes or until lightly browned.
  9. Garnish with chives.
  10. (Three cups regular mashed potatoes can be substituted.)
