Cheezecake
- 2 (12 ounce) packages firm tofu
- 1 teaspoon vanilla
- 1 teaspoon Ener-G Egg Substitute, add powder to bowl
- 2 -3 tablespoons lemon juice
- 12 cup brown sugar, add more to taste
- 1 prepared graham cracker crust
- Place all ingredients in food processor and blend until smooth.
- (I used 1 box of Mori-Nu Firm Lite and 1 container regular firm water packed tofu.
- ).
- Pour into crust and bake in a 350degree oven for 30-45 minutes.
- It will be done when top starts to form a crack.
- Take out and cool.
- Once cool, place in refrigerator and chill - it will be best the longer you wait.
