Blue Cornmeal Jalapeno Muffins Recipe
- 1 c. blue cornmeal
- 3/4 c. all-purpose flour
- 3 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/4 teaspoon grnd cumin
- 2 beaten Large eggs
- 3/4 c. lowfat milk
- 1/4 c. veg. oil or possibly bacon drippings
- 1/4 c. minced jalapeno chile peppers
- Cream cheese (optional)
- In a medium mixing bowl stir together cornmeal, flour, baking pwdr, salt and cumin and set aside.
- In a small mixing bowl stir together Large eggs, lowfat milk, oil and jalapeno peppers.
- Add in egg mix all at once to cornmeal mix stirring just till moistened.
- Grease muffin c. or possibly line with paper baking c. and fill 3/4 full.
- Bake in a 400 degree oven about 15 min or possibly till a wooden toothpick inserted in the center comes out clean.
- Remove from the pan; serve hot with cream cheese Makes 12.
