Grilled Tri-Colored Pepper & Mushroom Salad
- 1 green pepper
- 1 red pepper
- 1 yellow pepper Target 1 pkg For $2.99 thru 02/06
- 8 oz. portobello mushroom caps
- 3/4 cup KRAFT Light Red Wine Vinaigrette Dressing, divided
- Cut peppers into quarters.
- Toss peppers and mushrooms with 1/2 cup of the dressing.
- Place vegetables on grill over medium coals.
- Grill 8 to 10 minutes or until tender, turning and brushing occasionally with dressing.
- Slice mushrooms.
- Toss mushrooms, peppers and remaining 1/4 cup dressing.
- Variation: Prepare as directed, omitting grilling.
- Place vegetables in skillet with 1/2 cup of the dressing.
- Cook and stir on medium heat until tender.
- Tip: Serve in flour tortillas.
