Grilled Tri-Colored Pepper & Mushroom Salad

  1. Cut peppers into quarters.
  2. Toss peppers and mushrooms with 1/2 cup of the dressing.
  3. Place vegetables on grill over medium coals.
  4. Grill 8 to 10 minutes or until tender, turning and brushing occasionally with dressing.
  5. Slice mushrooms.
  6. Toss mushrooms, peppers and remaining 1/4 cup dressing.
  7. Variation: Prepare as directed, omitting grilling.
  8. Place vegetables in skillet with 1/2 cup of the dressing.
  9. Cook and stir on medium heat until tender.
  10. Tip: Serve in flour tortillas.
