Fruit Cake
- 4 c. plain flour, sifted
- 3 c. sugar
- 3 sticks margarine (at room temperature)
- 7 eggs
- 3 c. pecans, chopped
- 1/2 lb. candied cherries
- 1/2 lb. box white raisins
- 3 tsp. vanilla flavoring
- 2 tsp. lemon flavoring
- Use 1/2 cup flour to coat raisins, cherries and pecans.
- You can add some cooked figs also if desired.
- Grease and flour a large tube pan.
- Turn oven to 300u0b0.
- Cream sugar and margarine good.
- Add flavorings and eggs, one at a time.
- Add flour, one cup at a time, mixing well.
- Then take spatula and fold in raisins, cherries and pecans that have been coated in flour.
- Bake in oven at 300u0b0 for 2 hours.
- (Place pecan halves around on mixture before placing pan in oven.)
- Cool cake 15 to 20 minutes before removing from pan.
