Waffle and Pecan Stuffing
- buttermilk, waffles- 10 toasted and cut into bite size pieces
- 2 tablespoons butter
- 1 yellow onion, chopped
- 14 cup celery, chopped
- 1 granny smith apple, chopped
- 12 cup chopped pecans
- 1 cup chicken stock
- 14 cup buttermilk
- 1 tablespoon maple syrup
- 1 tablespoon brown sugar
- 2 eggs
- 12 teaspoon sage
- 12 teaspoon thyme
- salt
- black pepper
- paprika
- saute onion, celery and apple in butter until softened.
- add herbs add seasoning to mixture.
- add chicken stock, brown sugar and maple syrup and reduce slightly.
- add waffles and toss until softened.
- add buttermilk and pecans and toss until completely coated followed by egg mixture to bind everything together.
- spoon stuffing into a casserole dish and cook at 350F for 45 minutes or until browned.
- let stand for 5 minutes and enjoy.
