AMIEs CHICKEN CURRY
- 1 kg chicken, cut up into serving portion
- 1 can coconut milk
- 1 onion, chopped
- 1 clove garlic, minced
- 1 large potato, diced
- 1 medium carrot, sliced
- 1 1/2 cup warm water
- 1 tsp brown sugar
- 2 tbsp cooking oil
- 1 salt and pepper to taste
- 3 tbsp curry powder
- 1 tsp chili powder (you can add more if u want spicy)
- 3 tbsp lemon or calamansi juice
- Saute garlic and onion in cooking oil.
- Drop in chicken pieces, cook covered for 5 minutes.
- Add the curry and chili powder and mix until equally distributed to the chicken.
- Pour in coconut milk and water.
- Let it boil for 10 minutes, stirring ocassionally.
- Add vegetables, calamansi or lemon juice and sugar.
- Mix well.
- Season with salt and pepper.
- Simmer gently, stirring frequently until chicken and vegetables is tender.
- Serve with hot steamed rice.
