Chicken Divan
- 4 chicken breast halves, skinless and boneless
- 2 (10 oz. each) pkg. frozen chopped broccoli, cooked or 2 lb. fresh broccoli, well trimmed and cooked until tender
- 1 can cream of chicken soup
- 1/2 c. milk
- 1/2 c. mayonnaise
- 1 c. grated Cheddar cheese
- 1 tsp. lemon juice
- 1/2 c. buttered crumbs
- Simmer chicken breasts until tender.
- Remove and cool enough to handle (or cook the night before).
- Chop.
- In 9 x 9 x 2-inch pan, arrange broccoli.
- Lay chicken over broccoli.
- Combine soup, milk and mayonnaise and stir until smooth.
- Add cheese and lemon juice.
- Pour sauce over chicken and broccoli and cover chicken completely.
- Cover pan with aluminum foil and bake at 350u0b0 for 30 minutes.
- Sprinkle crumbs on top before serving.
