Boysenberry And Apricot Compote Recipe
- 2 x Hard-ripe apricots
- 1/4 c. Water
- 1/4 c. Sugar
- 1/4 tsp Freshly grated lime zest
- 1 c. Dry white wine
- 1 c. Picked-over boysenberries Almond macaroons
- Halve apricots lengthwise and pit.
- Cut each apricot half into 4 wedges and transfer to a heatproof bowl.
- In a small saucepan bring water and sugar to a boil over moderate heat, stirring till sugar is dissolved.
- Stir in zest and wine and simmer 5 min.
- Pour syrup over apricots and stir in boysenberries.
- Refrigeratemix 20 min.
- Serve compote with macaroons.
- Serves 2.
