Texas Caviar - Superbowl
- 1/2 each onions diced
- 1 each green bell peppers diced
- 1 bunch scallions, spring or green onions sliced
- 2 each jalapeno pepper seeded if needed and diced
- 6 cloves garlic or to taste, minced, about 1 tablespoon
- 1 pint cherry tomatoes quartered
- 8 ounces salad dressing 1 bottle, italian and zesty
- 15 ounces black beans 1 can, drained
- 15 ounces black-eyed peas drained
- 1/2 teaspoon coriander or to taste, ground
- 1 bunch cilantro freshly chopped
- In a large mixing bowl, add onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander, toss until mix well and coat evenly.
- Cover and keep refrigerated for 1 1/2 to 2 hours.
- Toss with fresh cilantro as needed.
- Serve.
