Eggnog-Cherry Bread Pudding
- 2 cups heavy whipping cream
- 12 cup sugar
- 1 12 cups white chocolate chips
- 14 cup Bourbon
- 12 teaspoon cinnamon
- 14 teaspoon ground cloves
- 14 teaspoon gr. nutmeg
- 6 large egg yolks
- 6 cups bread cubes (1 inch )
- 12 cup cherries, pitted and halved
- 14 cup almonds
- In a medium saucepan, combine cream, sugar, white chocolate chips, bourbon, cinnamon, cloves, and nutmeg.
- Cook over medium high heat, whisking constantly until mixture begins to boil.
- Remove from heat.
- IN A MEDIUM BOWL, whisk egg yolks until smooth.
- Using a ladle,add half of hot cream mixture in slow steady stream to yolks, whisking constantly.
- Add remaining half of hot cream mixture whisking to combine.
- PLACE bread cubes in a large bowl, Pour egg mixture over bread cubes.
- Add cherries, stirring to combine.
- PREHEAT oven to 375.
- Generously grease 6 (4 ounce) ramekins.Spoon bread mixture into ramekins.
- Sprinkle tops with almonds.
- PLACE remekins in a 13 x 9 baking dish.
- Place in oven and carefully fill baking dish with enough water to come halfway up sides of tamekins.
- BAKE for 25 minute until set, Remove from ovenand let cool for 15min.
- Remove remekines from water.
- Invert onto plates.
