Green Beans With Mushrooms (Sem Aur Khumbi)

  1. Put the oil in a large wok, frying pan, or saute pan and set over medium-high heat.
  2. When hot, put in the cumin seeds.
  3. Let them sizzle for 10 seconds and then put in the sliced onion.
  4. Stir and fry until medium brown.
  5. Add the garlic and ginger and fry for a few seconds, or until the garlic turns golden.
  6. Put in the mushrooms.
  7. Stir and fry until the mushrooms lose their raw look and turn shiny.
  8. Add the beans, coriander, ground cumin, turmeric, garam masala, cayenne, and salt.
  9. Stir to mix.
  10. Add 1/2 cup of water and bring to a boil.
  11. Cover, turn the heat down to low, and cook gently for 15 minutes, or until the beans are tender.
