Italian Sausage with Penne and Escarole
- 2 medium onions, diced
- 1 Red bell pepper, diced
- 1 Salt & pepper to taste
- 1 1/2 lb Sweet Italian Sausage, casings removed
- 2 tsp Garlic, minced
- 1 bunch Escarole, torn to bite-size (approx. 2 heads)
- 1/2 cup Parmesan cheese, grated
- 1/4 tsp Crushed red pepper
- 1 box Penne
- Pour a small amount of extra virgin olive oil into a medium size pan
- Add onions, bell peppers, salt and pepper.
- Cook for about 6-8 minutes until mixture is carmalized.
- Add sausage and break sausage up into little pieces until it browns(approx.
- 10 minutes)
- Pour mixture into a large pot and add garlic and escarole (wash and spin dryed).
- Cook penne and add to mixture along with crushed red pepper and a little more olive oil to moisten
- Place mixture in serving dish and pour over parmesan cheese and more olive oil (if necessary).
