Italian Sausage with Penne and Escarole

  1. Pour a small amount of extra virgin olive oil into a medium size pan
  2. Add onions, bell peppers, salt and pepper.
  3. Cook for about 6-8 minutes until mixture is carmalized.
  4. Add sausage and break sausage up into little pieces until it browns(approx.
  5. 10 minutes)
  6. Pour mixture into a large pot and add garlic and escarole (wash and spin dryed).
  7. Cook penne and add to mixture along with crushed red pepper and a little more olive oil to moisten
  8. Place mixture in serving dish and pour over parmesan cheese and more olive oil (if necessary).
