Edamole Dip
- 1 cup Edamame, Shelled
- 1 cup Avocado, diced
- 1 Lime, Juiced
- 1 cup Tomatoes, Finely Diced
- 1 cup Red Onion, Finely Diced
- 1 whole Jalapeno, Finely Diced
- 1 Huge Handful Of Cilantro, Roughly Chopped
- Salt And Pepper, to taste
- Cook the edamame according to package directions.
- Add the avocado, edamame, lime juice, and a pinch of salt and pepper to a small food processor.
- Pulse until combined and a desirable consistency.
- Scoop mixture into a container.
- Add the tomato, onions, jalapeno, and cilantro to the container.
- Stir to combine the rest of the ingredients.
- Taste and season if needed.
- Keep refrigerated, unless you are eating the dip!
