Barley Pilaf Salad

  1. Cook and stir barley in hot oil on medium heat 2 to 3 min.
  2. or until lightly toasted.
  3. Add water; bring just to boil.
  4. Reduce heat to low; cover.
  5. Simmer 30 min.
  6. or until barley is tender; drain.
  7. Cool at least 10 min.
  8. Mix barley with remaining ingredients.
  9. Serve warm.
  10. Or, cover and refrigerate several hours or until chilled.
