Barley Pilaf Salad
- 1-1/2 qt. pearl barley
- 3/4 cup oil
- 1-1/4 gal. water
- 2-1/4 qt. navel oranges, peeled, chopped Safeway 1 lb For $0.79 thru 02/09
- 1-1/4 qt. KRAFT Poppy Seed Dressing
- 1-1/2 qt. red or green peppers, chopped
- 3 cups slivered almonds, toasted
- 3 cups green onions, sliced
- 2 Tbsp. salt
- Cook and stir barley in hot oil on medium heat 2 to 3 min.
- or until lightly toasted.
- Add water; bring just to boil.
- Reduce heat to low; cover.
- Simmer 30 min.
- or until barley is tender; drain.
- Cool at least 10 min.
- Mix barley with remaining ingredients.
- Serve warm.
- Or, cover and refrigerate several hours or until chilled.
