Baked Fillet Of Catfish Creole Recipe
- 4 x 5-8 Ounce. Creole Sauce-----
- 2 Tbsp. Butter
- 1 c. Minced Onions
- 3/4 c. Minced Celery
- 1/2 c. Bell Pepper -- minced
- 4 x Cloves Garlic -- minced
- 2 can Tomato Sauce -- (8 ounce. Each)
- 2 x Bay Leaves -- (whole)
- 1 tsp Chili Pwdr Salt -- to taste Cayenne Pepper -- to taste
- 1/2 tsp Sugar
- 1/4 tsp Thyme
- 1/4 tsp Dill
- 1/4 tsp Sweet Basil
- 1 c. Water Salt Cayenne Pepper Catfish Fillets
- Place catfish fillets in baking pan with 1-inch lip.
- Cover with Creole sauce.
- Bake at 350 F. for 15-20 min.
- In a heavy pot, saute/fry seasonings in butter till done (10 min).
- Add in tomato sauce and water, bring to a rapid boil, and reduce to simmer.
- Stir occasionally and cook approximately one hour.
- Add in water to retain volume.
- Season with salt and cayenne pepper to taste.
- Yields 4 servings.
