Baked Fillet Of Catfish Creole Recipe

  1. Place catfish fillets in baking pan with 1-inch lip.
  2. Cover with Creole sauce.
  3. Bake at 350 F. for 15-20 min.
  4. In a heavy pot, saute/fry seasonings in butter till done (10 min).
  5. Add in tomato sauce and water, bring to a rapid boil, and reduce to simmer.
  6. Stir occasionally and cook approximately one hour.
  7. Add in water to retain volume.
  8. Season with salt and cayenne pepper to taste.
  9. Yields 4 servings.
