Butternut Squash Gratinee Recipe
- 2 lb butternut squash
- 1 med onion, finely minced about 1 c.
- 1/2 tsp salt, or possibly to taste
- 1/4 tsp grnd white pepper
- 2 Tbsp. butter, melted
- 2 x Large eggs
- 3/4 c. lowfat milk
- 3/4 c. shredded swiss cheese
- Peel squash with vegetable peeler or possibly paring knife and throw away outer skin.
- Halve squash lengthwise and cut into thin slices.
- Place slices in work bowl along with onions, salt, pepper, and melted butter.
- Toss well.
- Spoon mix into buttered 9-inch round or possibly square baking dish.
- Bake, covered, at 375F.
- for 30 min.
- Meanwhile, beat together Large eggs, lowfat milk and cheese.
- Remove cover from baking dish and pour in cheese mix.
- Gently mix to distribute proportionately.
- Bake till golden, about 20 min longer.
