Cinnamon Cacao Roasted Almonds

  1. In the morning: Place the almonds (and any other nut you want to addI used pecans and pepitas/pumpkin seeds), in bowl and cover completely with water.
  2. Add the rock salt.
  3. Let them sit all day.
  4. Before bed: Put parchment paper on a large cookie sheet.
  5. Turn oven to lowest setting, (or set dehydrator to 150 F).
  6. Drain and lightly rinse the nuts.
  7. In a small separate bowl combine cacao powder (or cocoa powder), sea salt, and stevia and cinnamon.
  8. (This mixture is for 1 cup of nuts, feel free to double this if you have more nuts.)
  9. Sprinkle cacao mixture over wet nuts.
  10. Use a spatula to lightly stir and mix.
  11. Spread nuts across the pan in a single layer.
  12. Place in the oven overnight (about 8-10 hours).
  13. You will know when they are done by how crispy they are in the morning.
  14. They do crisp a little as they cool, so dont go too long!
  15. An amazing and super easy snack.
