Slice & Bake Peppermint Cookies

  1. Combine butter and sugar in bowl.
  2. Beat at medium speed, scraping bowl often, until creamy.
  3. Add egg and peppermint extract.
  4. Continue beating until well mixed.
  5. Add flour and baking powder; beat at low speed until well mixed.
  6. Divide dough into thirds.
  7. Add red food color to one-third.
  8. Add green food color to another third.
  9. Stir each until well mixed.
  10. Leave remaining dough white.
  11. Wrap each dough in plastic food wrap; refrigerate 1 hour or until firm
  12. Divide each color of dough into thirds.
  13. Shape each third into 12x1/2-inch rope on waxed paper.
  14. Gently press together 1 pink and 1 green rope.
  15. Add 1 white rope; gently press to form clover leaf-shaped multicolored roll.
  16. Repeat with remaining dough.
  17. Wrap each multicolored roll in plastic food wrap; refrigerate 2 hours or overnight until firm.
  18. Heat oven to 350F.
  19. Cut rolls into 1/4-inch slices.
  20. Place 1 inch apart onto ungreased cookie sheets.
  21. Bake 9-12 minutes or until edges are very lightly browned.
