Broccoli And Rotini Salad Recipe

  1. Cook rotini according to pakage directions.
  2. Drain and mix with 1/4 c. oil to prevent it from sticking.
  3. Set aside and allow to cold.
  4. Cut up brocolli; steam and then allow to cold.
  5. Dice onion, cut roasted peppers into strips reserving the liquid.
  6. In a large mixing bowl, combine the rotini, brocolli, onion, roasted peppers (including the juice), chickpeas and olives.
  7. Add in the remaining 1/2 c. of oil.
  8. Add in basil and black pepper.
  9. Sprinkle with grated cheese to taste.
