Peanut Butter Soup (Thai Style)
- 1 whole Onion, Chopped
- 3 cloves Garlic, Minced
- 1 Tablespoon Olive Oil
- 2 cups Vegetable Broth
- 2 cups Tomato Juice
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Cinnamon
- 1 pinch Salt And Pepper
- 1 can 15oz. Can, Garbanzo Beans, Rinsed And Drained
- 1 cup Brown Rice
- 1 cup Peanut Butter

- In a saucepan over medium heat, saute onions and garlic in a little olive oil.
- Once onions start to soften and turn translucent add broth, tomato juice, and spices.
- Bring to a boil then lower heat to a simmer for 15 minutes.

- While simmering, rinse and drain the garbanzo beans.
- Add rice, beans, and peanut butter into the broth and simmer for another 10 minutes or until the rice is cooked (use package instructions for timing guidelines).
