Salmon & Broccoli Quiche
- 1 frozen pie shell
- 3 eggs
- 2 tins of salmon
- 1 cup broccoli (finely chopped)
- 1/2 cup swiss cheese (grated)
- 2/3 cup milk
- 1/2 cup mayonnaise
- 1 tbsp cornstarch
- 1 tbsp dill
- dash salt
- dash ground black pepper
- Preheat oven to 400
- Cook frozen pie shell for 8 mins.
- Reduce oven temp to 325.
- Combine milk, mayonnaise, cornstarch, and eggs.
- Mix thoroughly.
- Add drained salmon, broccoli, cheese, dill, salt, and pepper.
- Mix well.
- Pour mix into pie shell.
- Cook at 325 for 45 mins.
- Let stand 5 mins before serving.
