Cottage Cheese With Vermicelli Fritters

  1. Mix the vermicelli with the cottage cheese, egg yolks, chives, scallions, flour, salt and pepper.
  2. Whisk the egg whites until stiff then fold lightly into the cottage cheese mixture.
  3. Brush the base of a large non stick pan with a little of oil.
  4. Drop tablespoonfuls of the mixture into the pan, cook until the undersides are brown, then turn and brown the other side.
  5. Drain very well on paper towels.
  6. Keep warm in a low oven while cooking the remainder of the mixture in the same way.
