Mini Frittatas - the special Occasion Method
- 4 brown eggs, lightly beaten
- 1 cup cream
- 14 teaspoon nutmeg
- 12 teaspoon black pepper
- 1 teaspoon salt
- 12 cup sausage, ground and cooked
- 12 cup potato, shredded and cooked
- 14 cup gruyere cheese, shredded
- Spray 2 mini muffin tins with non-stick cooking spray.
- Fill each one liberally with pinches of the filling ingredients.
- Typically for a holiday, I make several varieties besides the sausage & potato.
- You can substitute the filling ingredients above with some of the following options or your own creation:.
- *Smoked Salmon, chive, & white onion.
- *Ham & Swiss.
- *Crab, Potato, & Bell Pepper.
- *Bacon & Cheddar.
- *Spinach, Mushroom, and White Onion.
- *Tomato, Ricotta, & Pancetta.
- *Green Chili, Scallion, Monterrey Jack.
- Whisk together the Custard ingredients in a large measuring cup (or a bowl with a pouring spout).
- Pour some custard in each full muffin tin VERY carefully.
- You want to fill each one to the top but do not over fill or your pan will be a mess -- and they won't look as pretty for guests.
- Carefully place the muffin tins in a 350 degree oven.
- Bake for about 35-45 minutes -- until cooked through and golden brown on top.
- Serve to your guests family style or individually.
- I like to garnish with some fresh herbs or a touch of a cheese sauce.
- Fresh chopped sage goes well with the Potato & Sausage filling.
- Note1: My measurements may be slightly off and will vary depending on how much you want to fill each muffin tin.
- Be prepared to need a little more or less of the custard or filling.
- Note2: I usually make these every Christmas for my family brunch.
- I find that prepping all ingredients (except custard) in advance helps on Christmas morning.
- My son LOVES to help me fill the muffin tins!
