Tarragon Chicken With Mushrooms

  1. In a large frying pan, melt butter over medium heat.
  2. Add mushrooms and cook 5 minutes, until lightly browned.
  3. Remove from pan and set aside.
  4. Season chicken with salt and pepper.
  5. In same pan, heat olive oil.
  6. Add chicken and cook over medium heat until brown, about 5 minutes per side.
  7. Drain off excess fat.
  8. Add wine and tarragon.
  9. Cover and reduce heat, and simmer 25 minutes.
  10. Add reserved mushrooms and cook 5 minutes more.
