Tarragon Chicken With Mushrooms
- 2 tablespoons butter
- 12 lb mushroom, sliced
- 1 chicken, cut up
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons olive oil
- 12 cup dry white wine
- 1 tablespoon chopped fresh tarragon
- In a large frying pan, melt butter over medium heat.
- Add mushrooms and cook 5 minutes, until lightly browned.
- Remove from pan and set aside.
- Season chicken with salt and pepper.
- In same pan, heat olive oil.
- Add chicken and cook over medium heat until brown, about 5 minutes per side.
- Drain off excess fat.
- Add wine and tarragon.
- Cover and reduce heat, and simmer 25 minutes.
- Add reserved mushrooms and cook 5 minutes more.
