Pepper Chicken
- 2 Chicken breats, cut in strips
- 1 1/2 cup water
- 1/4 medium onion, cut in chunks
- 2 tsp garlic powder
- 1 tsp ginger
- 1 large pepper, cut into strips
- 1 quart whole tomatoes
- 4 tbsp cornstarch
- 4 tbsp sugar
- 5 tbsp soy sauce
- 1 Cooked Rice
- Cook chicken until browned
- Mix water, onion, garlic powder and ginger with the cooked chicken.
- Heat to boil, reduce heat.
- Cover and simmer for 5-15 min
- Add the pepper strips during the last 5 min of simmer
- Add whole tomatoes and cook until heated through
- Blend cornstarch, sugar and soy sauce in a separate bowl and stir into meat mixture.
- Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir for 1 min
- Serve over cooked rice
