Honey Vanilla Bran Muffins
- 1 14 cups oat bran
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 12 teaspoon ground nutmeg
- 1 (8 ounce) container low-fat vanilla yogurt
- 6 tablespoons honey
- 2 eggs, beaten
- 3 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 12 cup seedless raisin
- Preheat oven to 400.
- Grease 6 large muffins cups.
- Combine oat bran, flour, baking powder, baking soda, cinnamon and nutmeg in large bowl.
- combine yogurt, honey, eggs, oil and vanilla in small bowl until blended;stir into flour mixture just until moistened.
- Fold in raisins.
- Let stand 5 minutes.
- Spoon into prepared muffin cups, filling 2/3 full.
- Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan on wire rack 5 minutes.
- Remove from pan.
- Cool on wire rack.
