Banana & Carrot Cake ( easy way)
- 1 1/4 cup cake flour
- 2 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/3 cup brown sugar
- 100 grams chopped dark choco
- 1 cup over riped banana mashed
- 1 cup grated carrots
- 3/4 cup margarine or veg. oil
- 2 piece eggs beaten
- 1/2 packages buttermilk
- 1/3 cup sugar
- 1/3 tbsp evaporated milk
- 1/2 tsp vanilla extract
- In a large bowl combine cake flour, baking powder, ground cinnamon.
- Sift it 3x.
- Then add brown sugar and dark chocolate.
- In another bowl combine mashed banana, grated carrots, veg.oil and beaten egg.
- Mix well by using spatula.
- Set aside.
- Combine all the cake mixture and banana/carrot mixture using spatula until well incorporated.
- Transfer it on the pan.
- Bake for 20 to 25 mins at 375F.
- For the Icing: cream butter and sugar by using mixer.
- Add milk and vanilla one at a time.
- Set mixer in medium speed to obtain a smooth and creamy icing.
- Use pastry bag for decorating.
