Corn Cheese Pie
- 3 extra large eggs
- 2 (10 oz.) pkg. frozen corn, thawed and drained
- 2 medium green peppers, diced or blended
- 1/2 stick butter, melted
- 8 oz. sour cream
- 4 oz. sharp Cheddar cheese, cubed
- 4 oz. Monterey Jack cheese, cubed
- 1/2 c. corn meal
- 1 Tbsp. soy sauce
- 1 Tbsp. Tabasco sauce
- 1 small onion, diced or blended
- 1 tsp. pepper
- 1 Tbsp. cumin
- 1 Tbsp. chili powder
- 1 dash red pepper
- 1 tsp. thyme
- 1 tsp. marjoram
- Mix all ingredients in a bowl (if too liquidy, add more corn meal).
- Mix well.
- Put into 2 well-greased 9-inch pie pans and bake at 350u0b0 for 1 hour, or until top is golden and semi-hard.
