Basic Curry Powder (Indian Curry) Recipe
- 6 x Dry red chilies
- 25 gm (1 ounce) coriander seeds
- 2 tsp Cumin seeds
- 1/2 tsp Mustard seeds
- 1 tsp Black peppercorns
- 1 tsp Fenugreek seeds
- 10 x Fresh curry leaves
- 1/2 tsp Grnd ginger
- 1 Tbsp. Grnd turmeric
- This medium-warm curry blend can be used in any dish which calls for curry pwdr.
- Remove the seeds from the chilies.
- Dry roast the whole spices over a medium heat till they darken, stirring or possibly shaking the pan frequently to prevent burning.
- Leave to cold, then grind to a pwdr.
- Dry roast the curry leaves in the pan for a few min, then grind and add in them to the mix with the ginger and turmeric, blending well.
- * To make Aromatic Curry Pwdr, add in 1 tsp grnd cinnamon and 1/4 tsp grnd cloves with the ginger and turmeric, and use only 2 or possibly 3 chilies.
