Smothered Pork Chops

  1. Cook Bacon
  2. Place bacon on paper towel covered plate.
  3. Leave bacon grease in the pan.
  4. Using 2 tbs of bacon grease add onions, garlic, 2tbs of brown sugar, rhyme and a 1/4 tsp of salt.
  5. Cook until onions are soft and carmelized.
  6. Add 1 cup of chicken broth.
  7. Scrape pan to remove those yummy brown bits.
  8. Place in slow cooker with remaining chicken broth.
  9. Add remaining brown sugar, soy sauce, tapioca, and the bay leaves.
  10. Season chops with salt and pepper.
  11. (I browned my chops in skillet then I placed them in slow cooker.
  12. )This step isn't necessary though.
  13. Place in slow cooker and push into liquid.
  14. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours.
  15. Place chops on a serving plate and cover with foil.
  16. Remove bay leaves ans skim as much fat as possible off of surface.
  17. Stir in vinegar and season to taste.
  18. I served it over mashed potatoes.
  19. Top that with sauce, bacon and chopped parsley.
  20. Enjoy
