Rigatoni Ala Vodka With Shrimp
- 4 Tbsp. butter
- 1 medium size onion, diced
- 1 clove garlic, chopped
- 3 basil leaves, chopped
- 1/2 c. vodka
- 1 (14 oz.) can whole stewed tomatoes
- 1/2 pt. heavy cream
- 1 lb. peeled and deveined shrimp
- 1 lb. rigatoni, cooked and drained
- additional basil leaves for garnish (optional)
- Melt butter over medium heat, do not let it brown.
- Over medium to low heat, cook onion, garlic and basil until onion pieces are soft, about 8 to 10 minutes.
- Add vodka.
- Raise heat to boil, sirring the mixture frequently.
- Lower heat to simmer and cook sauce for 8 minutes or until about 1/4 of the mixture has evaporated and the aroma of the vodka has subsided.
- Add tomatoes, continue cooking about 5 minutes longer.
- (Tomatoes should be soft.)
- Add heavy cream and cook 5 minutes longer.
- Add shrimp, cover pan and cook additional 5 to 8 minutes or until the shrimp are cooked through.
- Cook rigatoni according to package directions. Drain and transfer rigatoni in a large bowl.
- Add vodka sauce and toss well with pasta.
- Garnish with basil leaves, if desired. Makes 4 servings.
