Easy Simple Roast Lamb -- Greek Style
- 2 12-3 lbs lamb shoulder
- 14 cup olive oil
- 2 tablespoons garlic, minced
- 2 tablespoons oregano
- 1 tablespoon salt
- 2 tablespoons pepper
- Preheat oven to 325°F.
- Combine olive oil, garlic, oregano, salt and pepper.
- Rub mixture over lamb.
- Place lamb in roasting pan.
- Cook lamb uncovered for 90 minutes (30min/lb) to internal temp 145°F (go by temp, not by time!
