Dried Apricot Pumpkin Bread Recipe

  1. Combine pumpkin, sugar and oil, mix to blend.
  2. Beat in Large eggs.
  3. Combine flour, soda, baking pwdr and spices and add in to pumpkin mix.
  4. Mix in pudding mix, apricots and nuts.
  5. Mix.
  6. Pour into 2 greased 8 1/2 x 4 1/2 inch loaf pans.
  7. Bake 1 hour at 350 degrees.
  8. Cold 10 min and remove from pans.
  9. Makes 2 loaves.
