Jaeson'S Chili
- 1 lb. ground sausage
- 1 lb. ground beef
- 2 medium to large onions, chopped
- 3 large garlic cloves, minced
- 3 c. beer
- 1/2 lb. fresh tomatoes, peeled and chopped
- 1 jalapeno pepper, minced
- 1 (8 oz.) can tomato sauce
- 1/4 c. chili powder
- 1 Tbsp. salt
- 1 Tbsp. cumin
- 1 1/2 tsp. paprika
- 1 (1 lb.) can kidney beans
- 2 to 3 Tbsp. yellow corn meal
- Brown meat well; drain on paper towels.
- Saute onions and garlic until soft.
- Place all ingredients (except beans and corn meal) in a large pot.
- Cook over low heat for 2 hours.
- Add beans and cook another hour.
- Degrease chili.
- Stir in corn meal and return to heat.
- Bring to a boil; stir constantly.
