Toffee Cookies
- 1 1/3 cup toffee bits
- 3/4 cup light brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 1/2 cup butter - softened
- 3/4 cup granulated sugar
- 1/2 tsp salt
- 2 1/4 cup all-purpose flour
- 1 tsp baking soda
- Preheat oven to 350 and line 2 baking sheets with parchment paper.
- Stir together flour, baking soda and salt.
- In separate bowl, beat both sugars, butter and vanilla until fluffly.
- Add eggs and beat well.
- Slowly add flour mixture, beating until well combined.
- Stir in toffee bits.
- Drop dough by rounded teaspoonfuls on prepared sheets.
- Bake for 9-11 minutes.
- Carefully remove cookies from pan and cool on a wire rack.
