Couscous Salad
- 1 cup chicken broth
- 1 cup couscous, uncooked
- 1 small cucumber, coarsely chopped
- 1 small red onion, thinly sliced, separated into rings
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted black olives
- 1 cup KRAFT Sun Dried Tomato Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
- 3 cups tightly packed torn romaine lettuce
- Bring broth to boil in medium saucepan.
- Stir in couscous; cover.
- Remove from heat; let stand 5 min.
- Meanwhile, combine next 4 ingredients in medium bowl.
- Add 1/2 cup dressing; mix lightly.
- Fluff couscous with fork; stir in remaining dressing.
- Cover platter with lettuce; top with couscous and vegetable mixture.
