Spinach And Cheese Cannelloni
- 1/2 pkg. lasagna noodles
- 1 lb. pkg. chopped spinach
- 2 Tbsp. butter
- 1 c. small curd cottage cheese
- 1/4 tsp. nutmeg
- 1/4 tsp. basil
- 2 Tbsp. grated Parmesan cheese
- 2 beaten eggs
- 1/2 tsp. salt
- dash of pepper
- Cook lasagne; drain.
- Cut each strip crosswise in half.
- Cook spinach in small amount of water 5 minutes; drain well.
- Cool.
- Mix spinach, butter, cottage cheese, nutmeg, basil, Parmesan cheese, eggs, salt and pepper.
- Place 1 tablespoon spinach mixture in center of each lasagna half.
- Roll up, beginning at narrow end. Place rolls, seam side down, in greased casserole.
- Cover with white sauce and bake at 425u0b0 for 15 minutes.
- Bread crumbs and dots of butter may be used on casserole before baking.
